Method
- Season and sear beef chunks in hot oil until browned. Remove.
- Simmer chiles, onion, garlic, tomatoes, spices in water 20 mins. Blend smooth with broth.
- Return beef to pot with sauce and broth. Braise 300°F oven 3 hours until tender.
- Shred beef, reserve consommé.
- Dip tortilla in consommé, fry one side. Add beef, cheese, fold, crisp both sides.
- Serve with toppings and warm consommé.
Notes
Adjust spice with fewer árbol chiles. Make ahead for best flavor.
