  • 1 tbsp oil neutral vegetable oil or skip for oil-free
  • 2 bay leaves
  • 4 cups beef broth low-sodium
  • 6 cloves garlic minced
  • 2 inches ginger peeled and grated
  • 2 stalks celery chopped
  • 1 tsp turmeric powder
  • 1/8 tsp black pepper
  • to taste salt
  • 1 tbsp lime juice freshly squeezed

  • 150 g beef sirloin thinly sliced
  • 1 onion diced
  • 2 cups mushrooms quartered
  • 3 baby bok choy halved
  • 200 g thin rice noodles dry weight
  • handful fresh cilantro chopped, for garnish
  • optional red chili flakes for heat

Method
 

  1. 1. Heat oil in a pot over medium heat. Add onion, mushrooms, and bok choy. Sauté until mushrooms become golden and bok choy sears slightly. Set aside vegetables.
  2. 2. In the same pot, add celery, bay leaves, garlic, and ginger. Sauté for 2–3 minutes until fragrant.
  3. 3. Sprinkle turmeric and pepper; stir briefly. Add beef broth and simmer for 15 minutes.
  4. 4. Add beef slices, simmer for 5 minutes until just cooked. Add salt and lime juice to taste; strain the broth if desired.
  5. 5. In separate pot, cook rice noodles per package instructions. Drain and arrange in bowls with cooked mushrooms, bok choy, beef, and onion.
  6. 6. Ladle hot broth over noodles and toppings. Garnish with cilantro and chili flakes. Serve immediately.

Notes

Make broth in advance for deeper flavor. Store broth and noodles separately to prevent sogginess. For a vegetarian option, use mushrooms and vegetable broth.
