- 1. Cook bacon until crispy; remove from skillet.2. Add potatoes to bacon fat and cook until browned.3. Add onions and peppers and cook till tender.4. Stir in sausage and bacon; heat through.5. Season with salt and pepper.6. Make wells in the skillet; crack eggs into them.7. Cover and cook over medium-low until egg whites set, about 8-10 minutes.8. Sprinkle cheese and cook until melted.9.
