Ingredients
  

Protein
  • 1 pound flank steak
Grain Base
  • 2 cups cooked quinoa or couscous
Vegetables & Toppings
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 bell pepper diced
  • 1 cup red onion thinly sliced
  • 1 cup chickpeas drained and rinsed
  • 0.5 cup feta cheese crumbled
  • 0.25 cup Kalamata olives pitted and sliced
  • fresh parsley chopped, for garnish
Seasonings & Dressing
  • olive oil
  • 1 teaspoon paprika
  • 1 lemon juice juice of one lemon
  • salt and pepper to taste

Method
 

  1. Marinate the flank steak in olive oil, lemon juice, paprika, salt, and pepper for 15-30 minutes.
  2. Cook quinoa or couscous according to package directions. Set aside.
  3. Preheat grill or grill pan to medium-high heat. Grill the steak 6-8 minutes per side until desired doneness. Remove and rest 5 minutes, then slice against the grain.
  4. In a bowl, combine cherry tomatoes, diced cucumber, diced bell pepper, sliced red onion, and chickpeas. Drizzle with olive oil and season with salt and pepper.
  5. Assemble bowls by dividing quinoa or couscous, topping with sliced steak, vegetables, feta cheese, Kalamata olives, and garnish with fresh parsley.
  6. Serve immediately, adding extra lemon juice or preferred dressing if desired.

Notes

For best flavor, marinate steak overnight. Use fresh lemon juice and quality olive oil for dressing. Customize vegetables to suit your taste or season.
