- Marinate the flank steak in olive oil, lemon juice, paprika, salt, and pepper for 15-30 minutes.
- Cook quinoa or couscous according to package directions. Set aside.
- Preheat grill or grill pan to medium-high heat. Grill the steak 6-8 minutes per side until desired doneness. Remove and rest 5 minutes, then slice against the grain.
- In a bowl, combine cherry tomatoes, diced cucumber, diced bell pepper, sliced red onion, and chickpeas. Drizzle with olive oil and season with salt and pepper.
- Assemble bowls by dividing quinoa or couscous, topping with sliced steak, vegetables, feta cheese, Kalamata olives, and garnish with fresh parsley.
- Serve immediately, adding extra lemon juice or preferred dressing if desired.
