- Heat olive oil in a skillet over medium heat. Sauté garlic for 30 seconds until fragrant.
- Add diced chicken, Italian seasoning, smoked paprika, salt, and pepper. Stir and cook 5 minutes until chicken is heated and seasoned.
- Remove from heat and add mozzarella and cheddar. Stir until cheese is melted and mixture is creamy.
- Place a tortilla flat, add the chicken-cheese mixture down the center, fold sides, and roll up.
- In the skillet, melt butter over medium heat. Cook wraps seam-side down for 2-3 minutes per side until golden and crispy. Let rest, cut, and garnish with parsley.
Notes
For extra flavor, brush tortillas with garlic butter before cooking. Rotisserie chicken or leftover turkey also works great. Serve with salad or chunky salsa for a full meal.
