Ingredients
  

Loaf
  • 1.5 cups All-purpose flour
  • 0.5 tsp Baking powder
  • 0.5 tsp Baking soda
  • 0.25 tsp Salt
  • 3 Large eggs
  • 1 cup Granulated sugar
  • 0.5 cup Sour cream or Greek yogurt
  • 0.5 cup Vegetable oil
  • 2 tbsp Unsalted butter, melted
  • 2 tbsp Fresh lemon zest
  • 0.25 cup Fresh lemon juice
  • 1 tsp Vanilla extract
  • 0.5 tsp Lemon extract
Glaze
  • 1 cup Powdered sugar
  • 2-3 tbsp Fresh lemon juice
  • 0.5 tsp Lemon zest for garnish optional

Method
 

  1. Preheat oven to 350°F. Line 9x5-inch loaf pan with parchment paper. Whisk flour, baking powder, baking soda, and salt together.
  2. Whisk eggs and sugar until pale. Add sour cream, oil, melted butter, lemon zest, juice, vanilla, and lemon extract, mixing until smooth.
  3. Fold dry ingredients into wet mixture until just combined. Pour into prepared pan and bake 45-50 minutes until toothpick comes out clean.
  4. Cool in pan 10 minutes, then transfer to wire rack. Whisk powdered sugar with lemon juice until smooth. Drizzle over cooled loaf.

Notes

Fresh lemon juice gives the best flavor. Store at room temperature up to 3 days or freeze unglazed up to 3 months.
